🧂 Ingredients

1 Pile your flower on a clean working surface. Use your fingers to make a well in
the middle and add your eggs in the centre.
2 Use your hands to incorporate the eggs and the flower together. The dough will
be a bit crumbly in the beginning. What I do is to keep a spray bottle with
water. When the dough is to dry, I spray it with a little bit of water. Work the
dough until the it forms a tight, slightly tacky-to-the-touch ball.
3 Store your dough in a cling film in the refrigerator for at least 20 minutes.
4 Roll your dough out on a clean working surface prepped with a little bit of
flower. Use your rolling pin to make it as thin as possible. When you pick up
your sheet of dough you should see your hand through it. Then you know it's
right.
5 Fold your dough in half and then another time so you get a kind of folded roll.
Take a sharp kitchen knife and cut small strips.
6 Boil in salted water for about 2-3 minutes before adding it to your pasta sauce.
