1 tbsp
baking powder
3 tbsp
cocoa powder
1/2 tsp
salt
1 3/4 cups
buttermilk

large eggs
1/3 cup
unsalted butter
melted
2 tsp
pure vanilla extract
2 tbsp
red food coloring

Instructions

In a medium bowl, mix together dry ingredients: flour, sugar, baking powder,
cocoa powder, and salt.

In a separate large bowl, add wet ingredients: eggs, buttermilk, vanilla
extract, and butter. Whisk until smooth.

Add food color to the wet ingredients and stir until well blended.

Gradually whisk dry ingredients into the wet ingredients. Whisk until smooth and
well combined.

Turn on mini waffle maker. When waffle maker indicates it is ready, pour
approximately 1/4 cup of waffle batter into the bottom iron of the waffle maker.
The batter will be thick so use a silicone spatula to spread evenly.

Close waffle iron and remove when waffle is cooked through (approximately 2-3
minutes). Continue with the remainder of the batter.

Serve warm with your favorite toppings.
