Chicken and Orzo Bake

🧂 Ingredients

• 2-3 Chicken breasts

   (or thighs for extra juiciness)
• 1 tsp Italian seasoning
• 2 cups Orzo pasta
• 1 medium Onion
• 1 Lemon

  juiced
• 7 ounces Sun dried tomatoes
• 2 handfuls spinach
• 7 ounces Boursin cheese
• 2.5 cups Chicken or veggie broth
• Garlic butter

Instructions

• 1 Preheat oven to 375°F. Season the chicken breasts with Italian seasoning, salt,
  and pepper.
• 2 In a large oven-safe pan, sear the chicken on both sides until golden brown.
  Remove and set aside.
• 3 In the same pan, sauté the onions until soft, then add the sun-dried tomatoes,
  spinach, and orzo. Pour in the chicken broth and lemon juice, stirring to
  combine.
• 4 Nestle the chicken breasts back into the orzo mixture, then crumble in the
  Boursin cheese. Cover and bake for 25-30 minutes until the chicken is cooked
  through and the orzo is tender.
• 5 Remove from the oven and let cool slightly before serving.
• 6 Garnish with parmesan cheese if you prefer.
