Cheeseburger Casserole

This Weight Watchers Friendly Cheeseburger Casserole recipe has been a go to for
me while on Weight Watchers for years. It is not only a super easy dinner
recipe but a recipe that keeps me on track while also feeding my picky kiddos
dinner! Cheeseburger Casserole is a yummy cheeseburger in a casserole dish!

Instructions

1 Preheat the oven to 350 degrees and spray a 9 x 13 inch baking dish with cooking
spray.
2 In a large pot of boiling salted water, cook the pasta according to the package
directions - drain well.
3 In a large skillet, heat the oil over medium-low heat. Add the onions and cook
until soft, about 5 minutes. Stir in the garlic and cook for 30 seconds.
4 Stir in the turkey and cook until browned; season with salt and pepper.
5 Stir in the tomato paste and mustard, then add the tomatoes and combine well.
6 Let the meat mixture cook until thickened, about 2 minutes.
7 Toss the meat mixture with the pasta and spread it into the prepared dish.
8 Top with the cheddar cheese and bake at 350 degrees uncovered until the cheese
is melted, about 15 minutes.
9 Remove from oven and sprinkle the chopped pickles over the top and serve.
