Instructions

1 Cook the gluten-free pasta according to the package instructions. Drain and set
aside.
2 In a large skillet, heat the olive oil over medium heat. Add the chopped onion
and garlic, and sauté until the onion is translucent.
3 Add the lemon zest, lemon juice, vegetable broth, coconut milk, dried oregano,
salt, and pepper to the skillet. Stir well to combine all the ingredients.
4 Crumble the vegan feta cheese and add it to the skillet. Stir the sauce until
the feta cheese begins to melt and incorporates into the sauce, creating a
creamy consistency.
5 Continue to cook the sauce on medium/high heat for about 5 minutes, bringing it
to a light boil. Lower heat and let simmer on low for 5 minutes to thicken up.
6 Add the cooked pasta to the skillet and toss it in the sauce until well coated.
Cook for an additional 2-3 minutes.
7 Remove the skillet from heat and garnish with fresh parsley.
