2 pounds lean ground beef
3/4 cup fresh bread crumbs
1/2 cup ketchup
1/2 cup minced onion
1/2 pound fresh mushrooms

2 large eggs

1 1/2 teaspoons salt
1/2 teaspoon black pepper
6 whole mushrooms

Instructions

1 Start by preheating your oven to 350°F.
2 Set aside six whole mushrooms while chopping the remaining mushrooms finely.
3 In a large bowl, mix together the ground beef, chopped mushrooms, bread crumbs,
minced onion, ketchup, beaten eggs, salt, and black pepper until everything is
thoroughly combined.
4 Layer half of the meat mixture evenly into a 9x5-inch loaf pan.
5 Press the whole mushrooms into the top of the mixture, stems downwards.
6 Cover the mushrooms with the remaining meat mixture and gently press down to
seal the layers together.
7 Bake in the preheated oven for about 1 hour and 45 minutes, or until the center
is no longer pink and the internal temperature reaches 160°F on an instant-read
thermometer.
