Salted Caramel

A smooth and decadent filling made of just a few ingredients! This addicting
caramel is perfect for cakes, cupcakes, tarts, and even drizzled on ice cream!

Instructions

1 Weigh out all of the ingredients before you start making the caramel - prep is
very important for this dessert! Set out some oven mitts next to the stove as
well.
2 Stir together the sugar, water, and lemon juice in a medium pot, and bring to a
boil on high heat. You will leave this mixture on high heat for the entire
cooking time.
3 While the sugar is cooking, bring the cream to a boil in the microwave (about 2
minutes) - keep your eye on it to make sure it does not boil over and make a
mess.
4 Monitor the caramel until it starts turning amber-brown - this can take a while.
Once the desired colour is achieved, take the caramel off the heat and set the
pot on a trivet.
5 Wearing oven mitts, slowly begin stirring in the hot cream to the caramel. It is
very important to only add a little bit at a time, as the caramel will bubble up
and can seriously burn you.
6 Once all the cream is added, stir in the butter and salt.
7 Pour the caramel into a container and let it cool with the lid off, at room
temperature. Once cooled, store in the fridge for up to four weeks. This filling
can also be frozen.
