Ingredients:
1 cup softened butter
⅔ cup granulated sugar
2 eggs
2 teaspoons vanilla
3 cups all-purpose flour

you can substitute 1 cup wheat flour for a healthier version
¼ teaspoon salt

Instructions

1 Preheat your oven to 350°F.
2 In a large mixing bowl, cream together the butter and sugar. Add eggs (one at a
time) and vanilla. Mix well.
3 In a separate bowl, combine flour and salt. Slowly stir into the butter and
sugar mixture until well combined.
4 Press the cookie dough into cast-iron molds. Use a butter knife to shave off any
excess dough to make the backs of the cookies as flat as possible.
5 Bake for 16 minutes.
6 Remove from the oven and cool for one minute before inverting onto a cooling
rack. The cookies should slide right out of the mold. If not, keep the cast-iron
pan upside down over a cooling rack for about ten minutes to allow more time to
release.
7 Once completely cooled, frost as you see fit. You can pour a thin royal icing
over each cookie and let it set.
8 Package these cookies up in clear bags and deliver them to all your
cactus-loving friends.
