Berry Meringue Trifle

This delicious berry meringue trifle is the perfect spring or summer dessert
recipe. Light and tasty, and easy to whip up for a summer picnic or BBQ.

Instructions

1 Prepare the cake mix as directed on the packaging. Add 8-9 drops of red food
coloring and stir. Pour cake mix into a 9x12 cake pan and bake according to the
package directions. Allow to cool.
2 Beat together the mascarpone, icing sugar, whipping cream, and vanilla in a
medium bowl until smooth. Set aside.
3 Combine the berries, sugar, and lemon juice in a medium bowl. Lightly smash the
berries with a fork to release the juices.
4 Cut up the cake into small bite-sized cubes.
5 Break the meringues into small pieces.
6 Add some cake pieces to the bottom of a mason jar. Add a couple of spoonfuls
{approximately 1/3rd cup} of the mascarpone filling followed by a small handful
of the meringue pieces and then the berries {approximately 1/4-1/3 cup}. Repeat
the layering until you reach the top of the jar. Top with a small dollop of the
mascarpone mixture and garnish with fresh berries.
