🧂 Ingredients

1 Heat the oven to 300F.
2 Using a sharp knife, carefully cut the tops off of all the garlic cloves.
3 Pour the oil into a large roasting pan. Add the garlic cloves, cut side down.
4 Add any herbs and spices that you like.
5 Cover the pan with aluminum foil, and roast for about an hour. The garlic should
be caramel coloured, and very soft.
6 Remove the garlic and herbs from the oil, and pour the oil into a bottle.
7 Once the garlic has cooled enough to touch it, gently squeeze the cloves out of
the skins into a bowl.
8 Add the garlic cloves into the jars. You want them packed tight but not crammed
in. Pour in enough of your new garlic oil to cover the cloves. You'll need to
poke the cloves around a little bit to dislodge any bubbles, and may need to top
up the oil.
9 Store the jars in the fridge.
