Add the avocado oil to a large heavy pan and heat on medium heat.

While the oil is heating , remove the chicken pieces from the packaging and pat
dry. Sprinkle with salt and pepper and set aside. Scramble the egg in a bowl.

In a zip top bag or large bowl, mix together the CarbQuick, salt, pepper, garlic
powder, onion powder, and paprika.

Add the chicken to the egg, then toss in the dry mixture. Shake or stir until
coated evenly.

Remove the coated chicken pieces from the mixture and place on a plate or a wire
rack. Let sit for a few minutes until the oil is heated and ready for frying.

Fry the chicken in batches in the hot oil until golden brown. Remove from oil
and place on a wire rack or paper towels to drain.

In a large bowl, toss the drained chicken breast pieces in the Buffalo sauce.
Remove from the bowl and serve immediately.
