butter (softned)
1 cup
sugar
2 large
eggs
1 teaspoon
vanilla extract
1½ cup
all purpose flour
1 teaspoon
baking powder
½ teaspoon
salt
confectioners' sugar, for dusting

Instructions

Preheat your waffle iron and Lightly grease the plates.

In a large bowl, cream together the butter and sugar until light and fluffy,
about 2 minutes.

Beat in the eggs and vanilla until combined. In a small bowl, whisk together the
flour, baking powder and salt.

Gradually stir the dry ingredients into the wet ingredients until a thick dough
forms.

Scoop rounded tablespoon-sized balls of dough onto the preheated waffle iron.
Cook for 2-3 minutes, until lightly browned.

Carefully remove the cookies from the iron and transfer to a wire rack to cool
slightly.

Repeat with remaining dough. Once cooled, dust the waffle cookies lightly with
confectioners' sugar. Enjoy!
