1 In a large bowl, blend the milk, pumpkin puree, egg, vegetable oil, and vinegar
until smooth.
2 In a separate bowl, whisk together the flour, brown sugar, baking powder, baking
soda, ground allspice, cinnamon, ginger, and salt. Gradually incorporate this
dry mix into the pumpkin mixture until just combined.
3 Preheat a skillet or griddle on medium-high and apply a light layer of cooking
spray.
4 Pour 3 to 4 tablespoons of the batter onto the hot surface for each pancake.
Gently press down with a spoon.
5 Cook until bubbles appear on the surface, roughly 2 minutes.
6 Flip the pancakes carefully and allow to cook for another 2 minutes until
they're golden brown.
7 Repeat the cooking process with the remaining batter.
8 Serve these pancakes hot, topped with syrup or whipped cream to your liking.
