Lemon Shortbread Stars

Delicious Lemon Shortbread Stars with a Lemon Glaze!

🧂 Ingredients

2 cups Plain Flour
2 tbsp Rice Flour
200 g Unsalted Butter
1/3 cup Icing Sugar
1 tsp Finely Grated Lemon Rind
2 tbsp Lemon Juice
1 cup Icing Sugar
2 tbsp Lemon Juice
Yellow Food Coloring
Silver Cachous
toothpick

Instructions

1 Preheat oven to 180C
2 Mix flour, butter and sugar in food processor until mixture is crumbly
3 Add lemon rind and juice. Mix until it forms a dough.
4 Turn out dough onto a lightly floured surface and knead until smooth.
5 Roll out dough and cut out star with cookie cutter
6 Bake for 10 min or until very light brown
7 Cool on wire rack
8 Combine Icing sugar and lemon. Stir till smooth.
9 Dip biscuits face down in glaze.
10 Dip toothpick in yellow food coloring, and draw lines into icing from the center
of the star out, before it sets.
11 Place a silver cachou in the middle!
