Loaded Cauliflower Casserole

With colder weather brings the craving of some good old comfort foods. This
Loaded Cauliflower Casserole is a perfect dish to warm you up from the inside
and still get some delicious veggies into your meal.

🧂 Ingredients

1 head cauliflower

cut into pieces
4 ounce cream cheese
1/2 cup sour cream
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese
3 slices bacon

cooked and chopped
2 green onions

chopped

Instructions

1 Grease a 1-quart casserole dish with nonstick cooking spray. Set aside. Preheat
oven to 350 degrees.
2 Use a steamer to cook the cauliflower, about 20 minutes or until soft.
3 Pour cauliflower in a bowl and gently mash with a fork.
4 In a small saucepan, add cream cheese, sour cream, garlic powder, salt, and
pepper. Heat on low, stirring frequently until melted and smooth.
5 Remove from heat and stir in 1/2 cup of cheese. Add cheese mixture to
cauliflower and mix well to evenly coat.
6 Pour into prepared casserole dish.
7 Top with remaining 1/2 cup shredded cheese and bacon.
8 Bake for 20 minutes or until heated through. Serve topped with fresh chopped
green onions.
