Fluffy Cinnamon Pancakes (vegan)

A recipe for fluffy christmas cinnamon Pancakes with vegan option - without eggs
and dairy-free - simple and easy to make, very delicious!

Instructions

1 First mix the egg (or egg substitute) together with the milk, melted coconut oil
and sugar until frothy. Then add the sparkling water, so that the carbon dioxide
is still contained.
2 In a bowl, mix the flour, cinnamon, vanilla and baking powder separately first
and then add to the milk mixture.
3 Mix everything quickly and quickly. The dough should have a creamy, thick and
smooth consistency. (If the pancakes are still too thick, just add a little more
liquid.)
4 Then let the dough chill for about 10 minutes.
5 Heat up coconut oil in a large pan on a medium heat.
6 Now add about 2 tablespoons of dough per pancake to the pan and shape with a
circular motion round pancakes.
7 As soon as bubbles form on the surface (after about 2-3 minutes), flip the
pancakes and bake for another 2-3 minutes.
8 Serve the warm pancakes with peanut butter, berries and the other toppings as
desired.
