onions
each weighing about 4 1/2 oz
1 oz
butter
1
litre white stock
5 1/3 oz
bacon rind or trimmings
2 1/2 oz
salt
6 3/4 floz
jus lie or demi-glace

Instructions

Peel the onions but do not cut the root ends too short.

Butter and season a braising pan, add the onions, season and three-quarters
cover with the stock.

Cover with the bacon, greaseproof paper and a lid, bring to the boil and braise
in the oven at 180°C for 1 hour.

Serve in a vegetable dish, coated with the brown sauce.
