Irish Coffee Cupcakes

🧂 Ingredients

• 2 cups all-purpose flour
• 3/4 cup cocoa powder
• 1 tsp espresso powder

  finely ground
• 1 tsp baking soda
• 1 tsp baking powder
• 1/2 tsp salt
• 3/4 cup vegetable oil
• 1 1/2 cups granulated sugar
• 2 eggs

  large
• 2 tsp vanilla extract
• 1 cup buttermilk
• 3/4 cup warm coffee
• 1/2 cup unsalted butter

  softened
• 2 cups confectioners' sugar
• 3 Tbsp Irish cream liqueur
• 1 tsp pure vanilla extract

Instructions

• 1 Preheat the oven to 350°F. Line a 12 cup muffin pan with paper liners. Set
  aside.
• 2 In a large bowl, combine the flour, cocoa powder, espresso powder, and salt and
  whisk until evenly distributed. Set this bowl of dry ingredients aside.
• 3 In a medium bowl, combine eggs, granulated sugar, oil and vanilla. Beat with an
  electric mixer using the whisk attachment until smooth.
• 4 Carefully pour the wet ingredients, buttermilk and warm coffee into the dry
  ingredient bowl. Stir on low until the ingredients are just combined.
• 5 Scoop the cupcake batter into the prepared cupcake pan, filling 3/4 of the paper
  liner.
• 6 Bake cupcakes for 20-22 minutes. Cool completely before moving on to the
  frosting.
• 7 Add the softened butter to a large mixing bowl. Beat the butter until creamy.
  Then, add the confectioners' sugar, vanilla extract and Irish cream liqueur.
  Beat with an electric mixer until smooth. If the frosting is too thick, simply
  add more Irish cream 1 tablespoon at a time until desired consistency is
  achieved.
• 8 Frost the cupcakes using a piping bag and your favourite piping tip. Sprinkle
  with chocolate shavings if desired. Serve and enjoy!
