Cast Iron Skillet Roasted Chicken

Tender, Moist Roast Chicken cooked in a cast iron skillet with bacon, green
onions and Blue Cheese. Perfect Sunday dinner for the family.

🧂 Ingredients

1 Wash and clean defrosted chicken. Apply a liberal amount of salt to cavity.
2 Stuff bird with green onions and garlic cloves reserving 3 for the topping.
3 Place bird in lightly oiled cast iron skillet. Sprinkle with salt and pepper.
4 Arrange reserved onions on top and sprinkle with blue cheese.
5 Arrange bacon on top to cover.
6 Transfer to preheated 350 oven and cook for 1 hour.
7 Remove from oven and arrange carrots and purple onions around roast.
8 Transfer back to oven and let cook an additional hour, or till skin has browned.
9 Remove from oven and transfer to cutting board. Let cool, slice and serve.
