Eggnog Cupcakes

🧂 Ingredients

• 1 ⅔ Cups All Purpose Flour
• 1 Cup White Sugar
• 1 ¼ Teaspoons of Baking Powder
• 6 Tablespoons Butter

  Softened
• 3 Egg Whites
• 1 Teaspoon Vanilla Extract
• ½ Teaspoon Nutmeg

  To Taste
• ¾ Cup Eggnog

  I used store bought
• ¼ Cup Milk
• ½ Cup Butter

  Softened
• ½ Cup Shortening
• 3-4 Cups of Powdered Sugar
• 4 Tablespoons Eggnog
• ¼ Teaspoon of Rum Extract
• 1 Teaspoon Nutmeg

Instructions

• 1 Preheat oven to 350 degrees F. Line a cupcake pan with paper liners.
• 2 In a large bowl, combine butter,sugar egg whites, eggnog, milk, vanilla, and
  nutmeg.
• 3 Stir in baking powder and flour a little at a time until just combined. Do not
  over mix.
• 4 Fill cupcakes liners ~¾ of the way full.
• 5 Bake for 18-20 minutes or until a toothpick inserted in the center of the
  cupcake comes out clean.
• 6 Cool in pan for 3-4 minutes. Remove to wire racks to cool completely before
  frosting.
• 7 In a large bowl, combine butter and shortening.
• 8 Stir in eggnog, rum extract, and nutmeg.
• 9 Gradually add powdered sugar a little at a time until you reach your desired
  consistency. Add more eggnog if icing is too thick.
• 10 Spread or pipe frosting onto your eggnog cupcakes.
