Rainbow Pepper Appetizers

Garden fresh peppers couple with tangy olives and melty cheese for the perfect
combination of summer in a bite … any time of the year! This appetizer, made
from 4 ingredients or less can be thrown together in minutes making it fast,
easy and delicious!

🧂 Ingredients

2 Cups Peppers

Use a pack of mini sweet peppers. Or, alternatively, halve and slice, into 9 pieces each, a ½ medium green, sweet red, yellow and orange bell pepper.
1 Cup Monterey Jack Cheese

shredded
2 Tbsp Black Olives

chopped
¼ Tsp. Crushed Red Pepper Flakes

Instructions

1 Prepare peppers as mentioned above, by halving and slicing, into 9 pieces each,
a ½ medium green, sweet red, yellow and orange bell pepper. Or alternatively,
halve 2 cups of mini peppers.
2 Place skin side down in an ungreased oven-proof skillet. Sprinkle with cheese
and olives. Additionally the crushed red pepper flakes, if using.
3 Broil 3-4 inches from the heat for 5-7 minutes or until the peppers are still
crisp but tender and the cheese is melted.
4 Serve immediately.
