Gluten Free Chocolate Mug Cake

🧂 Ingredients

• 2 tbs butter

  softened
• 2 tbs boiling water
• 2 tbs cocoa powder
• 55 g (¼ cup) caster sugar
• 40 g (¼ cup) gluten free self-raising flour

• 30 g dark chocolate

  melts or squares

Instructions

• 1 Select a large mug or ramekin.
• 2 Place the butter into your mug and pour over the boiling water. Stir until
  melted.
• 3 Add the cocoa powder, caster sugar and gluten free self-raising flour and mix
  together.
• 4 Press the dark chocolate into the centre of the mixture.
• 5 Microwave for 1 minute.
  
  The cake should be cooked on the top while staying slightly gooey in the middle.
  
  If you think it's still a little undercooked (all microwaves are very
  different), cook for a further 10 - 50 seconds on medium, in 15 second bursts.
• 6 Serve while warm with ice cream (optional).
