1/2 batch Theresa's pie crust (link in Notes), or your favorite pie crust recipe for a single-crust pie
2 tsp cornstarch
1/2 cup white sugar
1/4 cup brown sugar
1/2 tsp cinnamon
pinch of salt
2 large free-stone peaches
1 medium sized pluot
a few tsps of milk or cream for brushing top of crostata
