🧂 Ingredients

eggs
1 cup
+1/4 cup lemon sugar* Divided
3/4 cup
vegetable oil
1/2 teaspoon
salt
1 teaspoon
vanilla extract
1+1/2 cups
matzoh cake meal
1 cup
mixed dried fruit
cranberries, cherries, golden raisins, blueberries, Currants

Instructions

Beat the eggs, add sugar and salt.

Add oil and vanilla.

Add the matzoh cake meal in thirds until just combined.

Fold in the dried fruit

Cover the bowl with a dishcloth and refrigerate for 3 hours.

Preheat the oven to 350 degrees Line a baking sheet with parchment paper.

Divide into 3 small loaves

Sprinkle the tops with lemon sugar

Place in oven and bake for 40 minutes

Remove from oven and transfer the loaves to a baking rack to cool.

Slice the loaves into pieces starting from the small end.

Place the slices on the baking sheet and bake for 15 minutes.

Remove from oven and transfer the loaves to a baking rack to cool.

Plate and serve.
