🧂 Ingredients

1 In a non-stick skillet, heat up the tortilla until it is lightly brown on both
sides.
2 Set tortilla aside on a plate. Without oil, add crumbled feta to the pan in a
circle, making sure to leave a bit of room in the middle of the egg. The
circumference of the feta should be as wide as the size of your tortilla.
3 Crack and egg in the middle and let the feta crisp up. Add a bit of oil around
the edges to get the cheese nice and crispy.
4 Once the egg whites are more settled, add in chopped grape tomatoes, and green
onions.
5 Once feta is nice and crispy and egg whites are no longer translucent, turn off
the heat and remove the feta egg. Place it on top of the tortilla.
6 Fold the tortilla like a taco and eat as is! Pop the yolk for maximum sauciness
and enjoy!
