sliced courgettes
3 1/2 oz
chopped onion

chopped cloves of garlic
3
crushed dried red chillies
2 tsp
coriander powder
2 oz
shrimp paste
2 1/2 oz
desiccated coconut
1 oz
tomato puree
6 3/4 floz
water

Instructions

Sauté 3 1/2 oz chopped onion, 3 chopped cloves of garlic and 3 crushed dried red
chillies in oil; stir in 2 tsp coriander powder, then add 2 oz shrimp paste, 2
1/2 oz desiccated coconut and 1 oz tomato puree and moisten with 6 3/4 floz
water; cook and reduce slightly.

Place 4 1/2 lb sliced courgettes into a buttered and seasoned earthenware dish;
add the sauce and bake at 180°C for 1 hour.
