Sun Dried Tomato Relish

This is a tart, refreshing relish that goes great with burgers, wraps,
sandwiches.

🧂 Ingredients

1 cup Sun Dried Tomatoes

diced
1 Roasted Red Pepper

diced
1 tbsp Capers

roughly chopped
1/4 Red Onion

finely diced
1 1/2 tbsp Red Wine Vinegar
2 tbsp Olive Oil

I sometimes use a roasted garlic infused oil, and it's great!
Salt and Pepper to taste

Instructions

1 Combine all your ingredients in a bowl, and adjust the salt and pepper to your
tastes. Store in a glass jar in the fridge for up to two weeks.
