Instructions

1 In a large pot or Dutch oven, cook the bacon until crispy. Remove and drain on
paper towels. Set aside.
2 Add the ground beef to the pot and brown over medium heat. Drain excess grease
and set aside.
3 In the same pot, melt butter over medium heat. Add the onion, carrots, and
celery, cooking until softened, about 5 minutes. Add flour to the pot and cook
until the raw flavor is removed, about 2 minutes. Add garlic.
4 Stir in the chicken broth. Bring to a boil, then reduce the heat to a simmer.
Add the potatoes and cook until tender, about 10-15 minutes.
5 Add milk or half & half to the pot and simmer until thickened, about 5 minutes.
6 Reduce the heat to low and stir in the shredded cheese until melted. Add the
cooked ground beef and season with salt and pepper to taste.
7 Ladle the soup into bowls and top with crispy bacon, extra cheese, or your
favorite garnishes. Serve with crusty bread, crackers or my favorite, in a
