🧂 Ingredients

3 lb Yukon Gold potatoes, grated and drained
12 oz frozen artichoke hearts, defrosted and coarsely chopped
2 onions, sliced
4 eggs, beaten
2 tablespoons potato or cornstarch
1/3 cup matzo meal
salt
freshly ground black pepper
canola oil

Instructions

1 Preheat oven to 350. Bake the empty dish for 10 minutes.
2 Toss together all ingredients in a large bowl. Pour into the pan. Bake for 50-60
minutes or until golden and cooked through.
3 Slice and serve.
