Any meat can be used for this recipe. Make them into skewers or pan-fry them as-is. I put the lamb on a bed of charred pineapples, red peppers and cucumbers. Mangoes, asparagus, Brussel sprouts, cantaloupe and onions would be good options as well. I don’t like to eat ginger, so I leave it in slices so that I can fish it out before serving. You may also mince the ginger and mix it into the sauce. As for the chilies, it depends on how much heat you want to add. You can add fresh chilies that are chopped up, or a whole one either pierced or slit so that you can fish it out before serving.
