Lamb refers the the meat from younger sheep and mutton to the meat from older sheep. Lamb tends be more tender and has a milder flavour. Mutton tends to be tougher and has a stronger flavour. For this reason, if you are using mutton, you might want to transfer everything to a pressure cooker when the meat is added and cook it for 15 minutes.
