2 cups
plain Greek yogurt

scallions
sliced thin

shallot
minced
1 cup
mint
chopped
1 cup
basil
chopped
1 teaspoon
lemon zest
3 Tablespoons
lemon juice
Pinch
of red pepper
1/4 teaspoon
kosher salt
1/8 teaspoon
ground black pepper
1 pound
sugar snap peas
trimmed
1
bunch radishes
sliced thin
3 Tablespoons
extra virgin olive oil
3 Tablespoons
White Wine Vinegar

Instructions

Mix yogurt, scallions, shallot, mint, basil, lemon zest, lemon juice, red
pepper, salt, and black pepper in a bowl.

In a second bowl, mix sugar snap peas, radishes, oil, and vinegar. Season with a
pinch of salt and pepper.

Serve individually: spread yogurt mixture on a plate and top with vegetables.

To punch it up a bit, mix some of your favorite spices into the yogurt. Cumin
and coriander go well and add a nice flavor!
