Strawberry Shortcake Cookie Cups

🧂 Ingredients

• 2 ¾ cups all purpose flour
• 1 teaspoon baking soda
• ½ teaspoon baking powder
• 1 cup butter

  softened
• 1 ¼ cups granulated sugar
• 1 egg
• 1 teaspoon vanilla extract
• Whipped Cream
• Strawberries

Instructions

• 1 Preheat oven to 375 degree F. Spray a mini muffin tin with non stick cooking
  spray.
• 2 Mix flour, baking soda, and baking powder together in a small bowl until
  combined. Set aside.
• 3 In a separate bowl cream butter and sugar. Beat in vanilla and egg.
• 4 Gradually stir in flour mixture a little at a time until just combined.
• 5 Roll dough into 1 inch balls. Place in muffin tin and gently press down.
• 6 Bake 8-10 minutes or until golden brown. Cool for 5-10 minutes before removing
  from pan.
• 7 Puree 7-10 strawberries to make a drizzle.
• 8 Place one strawberry in each cup. Top with whipped cream and strawberry puree.
