🧂 Ingredients
For the Vegetarian Sausages
"Bangers":
4
vegetarian sausages
such as plant-based or tofu sausages
2 tbsp
olive oil
For the Mashed Potatoes
"Mash":
4
large potatoes
peeled and cut into chunks
1/4 cup
unsweetened non-dairy milk
e.g., almond milk, oat milk
2 tbsp
vegan butter or olive oil
Salt and pepper
to taste
For the Onion Gravy:
1
large onion
thinly sliced
2 tbsp
olive oil
2 tbsp
all-purpose flour
2 cups
vegetable broth
1 tbsp
soy sauce
Salt and pepper
to taste

Instructions

Vegetarian Sausages ("Bangers"): In a skillet, heat the olive oil over medium
heat. Add the vegetarian sausages and cook according to the package instructions
until they are browned and heated through. Set aside.

Mashed Potatoes ("Mash"): In a large pot, bring water to a boil. Add the potato
chunks and cook until they are fork-tender, about 15-20 minutes.

Drain the cooked potatoes and return them to the pot. Add the non-dairy milk and
vegan butter (or olive oil). Mash the potatoes using a potato masher or a fork
until smooth and creamy. Season with salt and pepper to taste. Keep warm.

Onion Gravy: In a separate skillet, heat the olive oil over medium heat. Add the
sliced onions and sauté until they are soft and caramelized, about 10-15
minutes.

Sprinkle the flour over the onions and stir to coat them evenly.

Gradually add the vegetable broth and soy sauce to the skillet, stirring
constantly to avoid lumps. Cook the gravy until it thickens and becomes smooth
about 5 minutes. Season with salt and pepper to taste.

Assembly: Serve a portion of the mashed potatoes on each plate. Top with a
vegetarian sausage ("banger") and generously spoon the onion gravy over the
sausages and potatoes.
