Duck Fat Fried Potatoes (Bratkartoffeln)

2 lbs
small yellow oval potatoes
1/3 cup
cooked speck or chopped thick-cut bacon
1
onion
4 tablespoons
duck fat
Kosher salt and freshly ground black pepper

sour cream

Instructions

Rinse the potatoes, peel them and boil in salted water for 15 minutes. You
should be able to run a fork through them but they should not fall apart.

Drain and let them cool completely.

Use a sharp knife or a mandolin to slice the potatoes into rounds.

Peel the onion and slice into rings

Heat the duck fat in a large skillet.

Add the onions to the pan and sauté until browned, remove with a slotted spoon
and set aside.

Spread the potato slices out and let them cook until browned on one side, about
8 minutes.

Flip them over, add the speck and the fried onion rings to the pan and cook for
another 5 minutes. If the pan becomes too dry, add more duck fat to the pan, go
ahead.

Season with kosher salt and freshly ground black pepper to taste.

Remove from heat, transfer to a serving platter.

Season the sour cream with kosher salt and freshly ground black pepper and serve
on the side.
