Instructions

1 Preheat oven to 350 degrees. Grease and flour your cake pans. I used 3 9-inch
cake pans. Set aside.
2 In an electric mixer add the eggs, sugar, pumpkin, oil, cinnamon, vanilla, and
combine.
3 Add the flour, baking powder, baking soda, salt, and mix until just combined.
4 Then, add the hot water at the very end and combine just until water is
incorporated. DO NOT over mix.
5 Pour the batter into your pans and bake for 25-35 minutes, until the middle of
the cake passes the toothpick test. Set cakes aside on a cooling rack. DO NOT
leave in cake pans, other they'll continue to bake in the hot pans.
6 In a large bowl, add the cream cheese, butter, confectioners' sugar, and vanilla
and whisk or mix with an electric mixer until smooth and fluffy.
7 Decorate cake as desired!
