poached salt cod

mashed potatoes

egg yolks

butter
1 1/2 floz
cream

Instructions

Combine 21 oz flaked, poached salt cod, 21 oz mashed potatoes, 3 egg yolks, 2 oz
butter and 1 1/2 floz cream.

Mould into small balls, flatten to form round cakes, and mark criss-cross
fashion.

Place into frying baskets and deep fry at 190°C until golden brown.

Serve garnished with lemon wedges and picked parsley.
