Peach Hazelnut Cake with Caramel Icing

🧂 Ingredients

• 1 1/3 cups canola oil

  or coconut oil
• 3 large eggs
• 2 cups granulated sugar
• 1 tsp. cinnamon
• 1 tsp. vanilla extract
• 3 cups UNBLEACHED all-purpose flour

  bleached flour toughens baked goods
• 1 tsp. salt
• 1 tsp. baking soda
• 1 tsp. baking powder
• 1 cup hazelnuts

  chopped (measure after chopping)
• 4 1/2 cups peaches

  peeled and chopped
• 1/4 cup unsalted butter

  (1/2 stick)
• 1/4 cup evaporated milk

  half-and-half or heavy whipping cream
• 1 cup light brown sugar

  packed
• 1 tsp. vanilla extract

Instructions

• 1 Mix oil, eggs, sugar, cinnamon, vanilla, salt, baking soda and baking powder
  with a wooden spoon.
• 2 (Do not use an electric mixer with this recipe!)
• 3 Add flour, hazelnuts and peaches and stir to combine.
• 4 Bake in a greased 9x13” baking dish at 350° for about 1 hour and 15 minutes or
  until a toothpick inserted in center comes out clean.
• 5 Pour icing over top of hot cake.
• 6 Allow icing to set before cutting.
• 7 Combine ingredients in a medium sauce pan.
• 8 Cook on low heat until bubbly.
• 9 Stir occasionally until smooth.
• 10 Pour icing over cake while hot.
