Mediterranean cauliflower tacos with creamy basil sauce

These mediterranean-inspired cauliflower tacos are simple but delicious! These
tasty tacos are topped with harissa roasted cauliflower, tomatoes, red onion,
and feta cheese. They are finished off with a creamy basil sauce that is made
with a greek yogurt base.

1 Preheat your oven to 425 degrees.
2 Chop the cauliflower into small to medium sized florets.
3 Toss the cauliflower in vegetable oil, harissa, sugar, and salt.
4 Lay the cauliflower out on a baking sheet that is lined with parchment paper.
Roast the cauliflower for 20 – 22 minutes at 425 degrees.
5 Combine all of the ingredients for the creamy basil sauce in a blender. Blend
the ingredients until they are fully combined.

Store the creamy basil sauce in the refrigerator until needed.
6 Chop the tomatoes and red onions into small pieces.
7 Lay the harissa roasted cauliflower, tomatoes, red onions, and feta out on the
corn tortillas. Top with creamy basil sauce and serve.
