🧂 Ingredients

2 cups cooked beets

chopped
1/2 large cucumber

peeled and chopped
1/4 cup fresh parsley

chopped
3/8 cup crumbled feta cheese
1/4 cup extra virgin olive oil
2 tbsp apple cider vinegar
1/2 tsp garlic powder
2 tbsp lemon juice

fresh or bottled
salt and pepper to taste

Instructions

1 Combine the beets, cucumbers, feta and parsley in a large bowl.
2 Make the dressing in a small bowl by whisking together the oil, apple cider
vinegar, lemon juice, garlic, salt and pepper.
3 Pour dressing over the salad ingredients and toss.
4 Enjoy!
