olive oil

large onion
finely chopped

garlic clove
peeled and crushed
14 oz
canned Italian tomatoes
sieved, or 10 fresh tomatoes, skinned and deseeded
3 floz
red wine
2 tbsp
finely chopped fresh parsley or 1 tsp dried
oregano

Instructions

Heat the oil and fry the onion and garlic until soft, about 15 - 20 minutes. Do
not brown.

Add the remaining ingredients and seasoning. Simmer for 30 minutes, stirring
often.
