🧂 Ingredients

4 small potatoes

chopped (about 20 ounces)
2 medium onions

chopped
1 head cauliflower

chopped
4 medium bell peppers

chopped, any color
1 tablespoon olive oil

divided, or avocado oil
12 ounces cooked chicken sausage

sliced

Instructions

1 Preheat the oven to 425*F. Line two baking sheets with foil or parchment paper
2 Add the potatoes and onions to a baking sheet and toss with ½ tablespoon
oil. Transfer to oven
3 Add the cauliflower and bell peppers to the other baking sheet with the
reamining ½ tablespoon oil and toss. Transfer to the oven.
4 Roast for 25 minutes.
5 Stir and add sausage to the baking sheet (either pan or both).
6 Roast another 15-20 minutes, until veggies & sausage are lightly browned. Remove
from oven and enjoy!
