sweetcorn kernels
fresh, canned or frozen

beaten eggs
3 1/2 oz
flour
1 tsp
baking powder
salt and pepper
6 3/4 floz

Mix the cooked sweetcorn, seasoning and eggs together. Add the sifted flour and
baking powder and mix to a fairly stiff mixture.

Heat the oil in a shallow pan and fry 20 spoonfuls of the mixture in the form of
small cakes until golden brown on each side.
