Instructions

1 Make the coleslaw: Add the coleslaw mix, mayonnaise, sugar, white vinegar, lemon
juice, salt, and pepper to a large bowl. Toss to coat everything evenly and
place in the refrigerator until needed.
2 Heat the avocado oil in a skillet over medium heat. Add the onion and cook for 3
to 4 minutes or until the onions are soft. Add the minced garlic. Stir for 1
minute or until the garlic is fragrant.
3 To the pan, add the shredded chicken, barbecue sauce, parsley, paprika, garlic
powder, and black pepper. Stir for 2-3 minutes or until the chicken is heated
through.
4 Open the buns and top the bottom of each bun with the lettuce leaves. Divide the
barbecue chicken between the buns and top with coleslaw, followed by the tops of
the buns. Serve immediately.
