🧂 Ingredients

1 bag multicolor fingerling potatoes

cut up into small pieces
1/3 cup olive oil
1/3 cup Dijon mustard
1/3 cup stone-ground mustard
4 garlic cloves

minced
Sea salt

to taste
1/2 lemon

cut into wedges
chopped fresh flat-leaf parsley

for garnish

Instructions

1 Preheat oven to 400 degrees.
2 In a large bowl, mix the olive oil, mustards, lemon juice, and garlic. Add the
potatoes and toss to coat.
3 In a baking sheet, spread the potatoes and sprinkle with sea salt to taste.
4 Bake for 30 minutes or until potatoes are tender when pricked with a fork.
5 Serve the potatoes on a serving platter, squeeze lemon juice over potatoes, and
sprinkle with parsley.
