Cranberry Pecan Oatmeal Cookies (Vegan)

hearty and utterly delicious! They are easy to make with basic ingredients and
are so satisfying!

1 Whisk together the melted butter, brown sugar, milk and vanilla extract in a
large bowl.
2 Mix in the baking powder and soda, salt and cinnamon followed by the oats and
plain flour.
3 Stir in the cranberries and chopped pecans. Cover and refrigerate the dough for
about 30 minutes until firm enough to shape into balls.
4 While the dough is chilling, preheat the oven to 180°C/160°C fan/350°F/gas mark
4. Line two metal baking sheets with baking parchment.
5 Roll the chilled dough into about 12 balls and place them well spaced apart on
the baking sheets. Flatten the balls slightly with your hand.
6 Bake for about 15 minutes until golden. The cookies will still be very soft but
will firm up as they cool.
7 Allow to cool on the trays for 5-10 minutes then carefully transfer the cookies
to a wire rack to cool completely.
