Trader Joe’s Cowboy Quinoa Bake

This is such an easy and incredibly flavorful casserole dish. Perfect for
weeknight dinner.

🧂 Ingredients

1 Pre-heat your oven to 350º Fahrenheit.
2 Cook quinoa according to the instructions. Take 2 cups of cold water, add the
quinoa, bring to a boil. Then let it simmer at the lowest temperature for 15
minutes.
3 Meanwhile grease a baking dish with baking spray.
4 Combine canned tomatoes, sweet corn, and black beans, and cooked quinoa into the
greased baking sheet.
5 Sprinkle with a shredded Mexican Cheese like the Trader Joe's Fancy Shredded
Mexican Blend.
6 Bake at 350º Fahrenheit for 25 minutes.
