Caramelized Onion Mashed Potatoes

Caramelized onion mashed potatoes are the ultimate comfort food! They’re perfect
for your upcoming Thanksgiving meal, or even for a Sunday night family dinner.

🧂 Ingredients

2 pounds of yellow potatoes
4 tablespoons of salted butter
1/3 cup of soy milk
1 large spanish yellow onion
1 tablespoon of salted butter
1 tablespoon of grape seed oil
salt and pepper to taste
water – just a bit as needed for the onions

Instructions

1 First, let’s get the potatoes on, so wash and peel them, then cut each potato
into 8 chunks. Add to a large pot and bring to a boil.
2 While the potatoes are boiling, let’s get the onions going. For the onions, pick
a pan that will create build up. I’m using my enamel cast iron pan, yet a
stainless steel pan will work well, too. Just don’t use non-stick. The best part
about caramelizing onions is the bits of goodness that get stuck to the pan.
3 Once you’ve got your pan selected, peel and wash the onions, the cut in half and
thinly slice. Put them in the pan and add 1/2 the butter and oil. The turn on
low-medium heat. When the butter has melted, add the rest of the butter and oil,
ensuring all the onions are well coated in the butter and oil fat. Gently stir
every 5 minutes or so. They’ll be nice and jammy after about 30 minutes.
4 After gently boiling the potatoes for 15-20 minutes, or until a knife easily
slices the potato, drain and set aside.
5 Add the potatoes to a bowl. If you did peel the potatoes, you could use your
ricer, yet I’m not a fan of the caramelized onions in perfectly smooth potatoes.
6 Next, add the butter, milk and salt (pepper, too if you wish) to the potatoes
and mash away. Once the onions are done (when they’re a deep and rich caramel
colour) add them to the mashed potatoes and mix well. Top with freshly chopped
green onions or leave them as it – then eat up!
