Halloween Monster Cookies

Halloween Monster Cookies are festive, sweet oatmeal chocolate chip cookies that
are ghoulishly delicious and so simple to make with plenty of chocolate, peanut
butter, Halloween M&M's, and fun, goofy candy eyes.

1 Preheat the oven to 350°F. Line baking sheets with parchment paper and set
aside.
2 In the bowl of a stand mixer fitted with the paddle attachment, cream together
the butter, brown sugar, and granulated sugar until light and fluffy. Beat in
the eggs, one at a time, and then beat in the peanut butter and vanilla until
well combined.
3 Combine the flour, baking powder, baking soda, and salt; add to the mixer and
mix until combined. With the mixer on low, add the oats until combined, then mix
in the M&Ms and chocolate chips. I like to reserve some M&Ms to add to press
into the cookies before they're completely baked.
4 Scoop mounds of cookie dough onto prepared baking sheets at least 2 inches
apart. Bake for 8 to 10 minutes, or until light golden brown.
5 Remove from the oven and let sit on the baking sheet for a few minutes before
transferring to a wire rack to cool. while the cookies are still warm, I like to
press a few more M&Ms into the cookies and add the candy eyes too.
