1 cup pitted dates
1 cup unsweetened coconut flakes
½ cup melted dark chocolate

Instructions

1 First, add a piece of parchment paper to a pan.
2 Add the pitted dates and coconut flakes to a food processor or blender.
3 Process for 30 seconds, until the mixture sticks together between your fingers.
4 Form the mixture into flat discs and place them on the parchment lined pan.
5 Use the end of a wooden spoon to form a hole in the middle of each cookie.
6 Dip the bottom of each cookie in the melted chocolate. Place on the lined pan.
Drizzle melted chocolate on top.
7 Place the pan in the fridge for 20 minutes, until the chocolate has hardened.
8 Finally, remove from the fridge and serve! Store leftovers in the fridge.
